Syfany The Beast

Winemaker Jakub comes from a family with a massive 500-year history of farming in the Czech Republic. All that deep agricultural knowledge goes straight into their organic and biodynamic vineyards. This adventurous orange wine is a highly unique blend of Gewürztraminer and Chardonnay. To strike the perfect balance between a bright white and a textured skin-contact wine, the Gewürztraminer spends up to a month on its skins, while the Chardonnay gets just a single day. The juice is then aged for a year in a mix of local acacia and oak barrels, allowing the tannins to soften and the flavours to properly mingle.

The result is an incredibly fun and playful drink that bursts with tropical energy. Expect bright notes of exotic mango, fresh pineapple, and juicy peach, all backed by a warming hint of baking spices. It is a medium-bodied pour with a refreshing, slightly salty finish that makes it super drinkable. Thanks to its lively acidity and concentrated fruit flavours, it is the absolute perfect choice to open alongside spicy dishes or anything with big, bold ingredients.
