Sylvain Pataille is leading the resurgence of Aligoté and proving himself a true master of this often-underestimated variety. His 2023 comes from calcareous clay soils with grapes hand-harvested and pressed in vertical presses, then fermented in barrels without peeling and without added SO2. After ageing in steel and barrique for about a year, what emerges is an intense wine that captures the ancestral essence of Aligoté. Lovely floral notes on the nose don't mask the characteristic sharpness of quince and pears, whilst the palate delivers searing acidity and tart citrus flavours with a surprisingly generous mouthfeel. There's plenty of well-defined power, starting with pink grapefruit juice and a hint of ginger spice. It's wonderful drinking now and pairs perfectly with boiled fish and Jerusalem artichoke sauce – a brilliant example of why Aligoté deserves serious attention.
