Sylvain's Bourgogne Rouge comes from 3 hectares of 50-year-old vines that showcase his mastery of traditional Burgundian winemaking. This 100% Pinot Noir from naturally farmed vines on calcareous clay soils undergoes fermentation with native yeasts in fibreglass, followed by three weeks of skin contact and a long élevage in old bariques for over two years. The result is juicy and multi-layered with terse elegance – think arctic berries with autumn forest floor, black spices, bramble, and dark plums. On the palate, there's extraordinary precision driven by striking minerality and dynamism, with delicate floral notes blending skilfully with hints of small red fruits. The savouriness wins out over tannin, gracefully creating volume in the mouth with a complex, persistent finish. Perfect drinking until 2028, ideally served at 16°C and pairs beautifully with a rack of pork and porcini mushrooms.
