Fleur de Pinot is as iconic as it is unique - Sylvain sources fruit from three ancient plots with vines planted in 1932, 1934, and 1949, creating something no one else does anywhere, least of all in Burgundy. This rare, serious rosé is crafted from Pinot Noir and Pinot Beurot (Pinot Gris) and matured for 14-18 months in 500-litre barrels, developing complexity that's astounding. Summer pudding aromas and flavours combine with bright redcurrant-like freshness on the palate, but there's an old vine density of texture that sets this apart from frivolous rosé. Sylvain believes the characteristic reductive minerality of this terroir is so beautiful that it would be a shame to make red wine here. Treat this like a light red rather than a typical rosé - serve at 10-13°C and definitely one for the cellar as it evolves beautifully with age.
