Marsannay Rouge showcases Sylvain's minimal intervention approach with grapes from calcareous clay soils undergoing whole cluster fermentation for two to three weeks without added sulfur dioxide. After vinification in steel and fibreglass containers, the wine spends over two years ageing in barriques, developing impressive complexity. The nose offers magnificent notes of red fruits and violet petals with spices and a hint of mint, whilst the palate is pure and crisp with a velvety texture supported by an impressive spine of ripe, sweet tannins of great finesse. There's a very distinct cherry crispness alongside flavours of cassis and blueberries, leading to a strict, vertical finish. This powerful Pinot Noir will gain even more complexity with a few years of ageing and pairs perfectly with lamb over charcoal or meats in sauce.
