Tímea Éless of Szóló crafts this biodynamic pet-nat from 40- to 60-year-old Furmint and Hárslevelű vines rooted in Tokaj's red clay and rhyolite tuff soils. Whole bunches are direct-pressed and fermented in stainless steel before being bottled while still active at around 15 g/L of sugar to complete fermentation under crown cap. Once the natural bubbles develop, the wine is disgorged to remove the sediment, keeping the final pour crisp and clean without adding any dosage or sulphur.
Lively and refreshing, it bursts with bright citrus zest, green apple, and ripe pear alongside delicate notes of white flowers and subtle herbs. The palate is driven by sharp, mouthwatering acidity, a fine mousse, and an underlying earthy minerality from those volcanic soils. Serve it ice-cold as an aperitif, or pour it alongside fresh oysters, goat's cheese, or a spread of light tapas.
