Forget the punchy fruit bombs, this is Sauvignon Blanc with a serious sense of place. Karl Schnabel treats his 20-year-old vines in Styria with obsessive biodynamic care, growing them on barren slate that defines every sip. After a year in old barrels, the usual loud aromatics have quietened down to let a cool, stony character take the lead.
It is a vibrant and precise wine that feels like it is dancing on the palate. You will find notes of lemon zest, fresh herbs and apple blossom, all underpinned by a flinty, saline finish. With no added sulphur and a silky, grippy texture, it is a sophisticated and mouthwatering example of what happens when you let the soil do the talking.
